GOJI AND BLUEBERRY CHIA PUDDING


I originally made these gorgeous specimens for my own enjoyment (indulgence), however I was so impressed with the taste and presentation, that I will most definitely be parading a tray or two in front of the extended family the next time they are over to visit. Breakfast will be the highlight, and what better way for everyone to start the day!

The antioxidants of Blueberries and Goji Berries, the nutritional portfolio of Chia Seeds, all that healthy Coconut fat, the active enzymes of Raw Honey, and the blood sugar regulation and metabolism boosting power of Cinnamon… It’s a complete breakfast in a cup! 

Be brave! A pudding like this should not be restricted to mornings... Sneak it in at any time! ;)


GOJI AND BLUEBERRY CHIA PUDDING

Dairy Free, Gluten Free, Refined Sugar Free, Nut Free.

Serves: 2
Total Preparation Time: 15 minutes
Setting Time: 5 hours
Fat & Calories: Who cares when you’re eating fantastically healthy! Come on!





Ingredients:

1 ½ cups of coconut milk
¼ cup of organic chia seeds*
2 heaped teaspoons of raw honey
½ teaspoon of organic ground cinnamon*
1 cup of fresh or frozen blueberries (fresh works better, however I used frozen this time)
2 cups of goji berries
Extra goji berries and blueberries to decorate at the end


Method:

1.     In a small bowl, mix together all ingredients EXCEPT the goji berries. While mixing, try to ‘smash’ the blueberries to release those wonderful colours and flavours.
2.     Set in the fridge for at least 5 hours, or overnight.
3.     Just before serving: When the pudding has set, put half a cup of goji berries into the bottom of each short tumbler (you'll need two short glass tumblers).
4.     Dollop a layer of chia pudding on top of the berries (leave enough room to add another goji layer and the last chia pudding layer),
5.     Add another layer of half a cup of goji berries to each glass.
6.     Finish with another dollop of chia pudding for the last layer.
7.     Top with extra goji berries and fresh (or frozen) blueberries.
8.     Enjoy!


Optional Topping:


Place on top of the undressed goji and blueberry pudding: 

  1. A dollop of whipped coconut cream.
  2. Over the coconut cream, sprinkle some cinnamon and then some goji and fresh blueberries. 
  3. Finish with a drizzle of raw honey… Delish!

Note:


Always keep refrigerated.
Add the goji berry layers and fancy topping just before serving. This will prevent the goji berries soaking up the moisture from the pudding.

ULTIMATE HERO SHAKE


The name says it all! This shake is simply the most satisfying, energizing and uplifting glass of goodness you could ever put in your body (I believe). The ingredients will keep you focused and content until lunchtime, and your sweet and fatty cravings will soon disappear after a few weeks of gulping down these babies! If you suffer from “brain fog” some mornings, you may well find the cloud “lifting” to oblivion in no time.  I hope this recipe works wonders for you like it most definitely has for me. It’s my go-to shake when I wake up hungry, when I know I have a massive day in store, or I feel I need to catch up on some nourishment. It’s the equivalent of giving myself a big old pat on the back when I whip up one of these in the morning!


So what makes the Ultimate Hero Shake my “Ultimate Hero”? Check it out!

Kefir: Probiotic, boosts immune system, aids digestion.
Banana: Prebiotic, fibre, stress reduction, energy.
Raw Honey: Energy, reduce allergy symptoms, antibacterial.
Cinnamon: Brain function, blood sugar regulation.
Ginger: Anti-inflammatory, natural pain killer, improves digestion.
Turmeric: Anti-inflammatory, anti-cancer.
Cayenne Pepper: Metabolism booster, improves circulation, aids digestion.

Ultimate Hero Shake!

Serves 2
Preparation Time: 10 minutes

Ingredients:
1 cup of homemade Coconut Yoghurt Kefir (or 1 tablespoon of Coconut Cream*)
3 cups of Almond Milk (organic and activated is ideal)
1 Banana (pre-frozen is even better!)
1 tablespoon of Raw Honey
Sprinkle of Cinnamon*
Teaspoon of ground  Ginger*
Teaspoon of ground Turmeric*
Sprinkle of ground Cayenne* (optional)
Sprinkle of freshly ground Black Pepper* (optional)
1 tablespoon powdered Cacao*
1 tablespoon of powdered Maca*
2 teaspoons of Fermented Green Powder* (Grainfields fermented Super Green & Dunaliella Powder*)
1/4 teaspoon of organic 100% Stevia Powder* (or less depending on your taste)
6 cubes of Ice
Cold Filtered Water to make up 1.5 litres in the Blender Jug.


Method:
In the order of the ingredients list, add everything to your Blender.  Serve in tall glasses. Easy!


Notes:
1.     If you can source fresh (organic) ginger and turmeric and juice it, you will be creating the ULTIMATE “Ultimate Hero Shake”. Just add the juice to the blender with the other ingredients and you have made yourself a powerhouse of additional nutrients and natural enzymes that are great for the tum-tum.
2.     The stars in this recipe are quite strong for those who do not consume them regularly. Perhaps halve the spices, and the cacao, maca and green powder to begin with and then gradually increase the quantities as your body becomes accustomed to that fantastic array of nourishment.
3.     Why on earth is Black Pepper listed in the Ingredients list? Because I’m crazy! No really… because I CARE about you! When using Turmeric, you should always include a small amount of Black Pepper to increase the bio-availability of the Turmeric (by up to 1000 times!). Turmeric has amazing anti-inflammatory and anti-cancer properties, however it is useless if your body cannot absorb any of it! So please add some Black Pepper on my behalf.
